Oatmeal Custard

Ingredients:

  • 2 3/4 c Water
  • 1 c Uncooked rolled oats
  • 1/2 c Egg substitute, thawed
  • 1/4 c Sugar
  • 1 1/3 c Skim milk
  • 1/2 ts Vanilla extract
  • 1/8 ts Salt
  • 1/3 c Chopped dried fruit (your choice)
  • 1/2 ts Cinnamon
  • Vegetable cooking spray

Directions:

Boil water in covered saucepan. Stir in oats. Return to a boil, reduce heat and continue to boil. Cook, uncovered, for about one minute, stirring occasionally. Remove from heat. Cover & set aside.
 
In a large bowl, mix egg substitute, sugar, milk, vanilla & salt. Add cooked oatmeal, dried fruit and cinnamon to egg mixture & mix well. Pour into 8-inch square pan coated with vegetable cooking spray. Place in larger pan of hot water. Bake in 350 degree oven for one hour, or until set. Yield:4 Servings
