Mexican Potatoes

Mexican Potatoes Tomato


  • 1 lb Potatoes; mashed, coarsely (4 large)
  • 1/4 c Onion; diced
  • 1 c Tomatoes; diced
  • 1/2 ts Fresh ground black pepper; To taste
  • 1/2 ts Hot chili pepper; to taste (1/2 to 1)
  • Salt to taste
  • 1 Clove garlic; pressed or minced


Fry all ingredients, except potatoes, together for 5 minutes or until they are clear and tender. You may add oil or butter to your taste. Add potatoes, fry until heated through. Garnish with shredded cheese.
