Ginger-Glazed Carrots

Ingredients:

  • 8 md Carrots; cut into 1/4 inch slices, (4 cups)
  • 1/2 c Water
  • 1/2 c Dry white wine or apple juice
  • 2 ts Margarine
  • 1 ts Ground ginger
  • 1 tb Lemon juice
  • 2 ts Packed brown sugar

Directions:

Cook all ingredients except lemon juice and brown sugar in 10 inch skillet over medium heat 12 to 15 minutes, stirring occasionally, until liquid has evaporated. Reduce to medium-low.
 
Stir in lemon juice and brown sugar. Cook 5 minuts, stirring occasionally, until carrots are glazed.
 
Makes 6 servings.
