Ginger And Onion Marmalade

  • 2 lg Onions
  • 1 cn Dry white wine
  • 1 2 inch piece root ginger
  • Olive oil
  • 1 Sprigs rosemary
  • White wine vinegar
  • Soft brown sugar


Peel and slice the onions into 5mm rings. Heat 2tbsp oil in a pan. Add onions and rosemary and sweat the onions until soft.
Pour in white wine and vinegar, heat until the liquid has disappeared. Serve cold or warm with bacon and cabbage.
