Gazpacho Soup #2

Ingredients:

  • 2 l Tomato juice
  • 1 l V8 juice
  • 5 Tomatoes; peeled, seeded & finely chopped
  • 1 Red pepper; finely cut
  • 1 Green pepper; finely cut
  • 1 sm Onion; finely cut
  • Parsley; finely chopped
  • 1 Lemon; juice of
  • Chopped chives
  • 1 Sprigs fresh tarragon
  • 2 -(up to)
  • 3 tb White wine vinegar
  • 1 Clove garlic; crushed
  • 1/2 Cucumber; peeled & diced

Hope you like them as much as we do in this house. I'd love to hear from other New Zealanders on this so far it seems that it's just myself & Rayna
 
Mix all ingedients (except cucumber) in a latge bowl. Chill for at least 2 hours. Add cucumber just before serving. Serves 6-8.
