Garry's Jerk Marinade

Barbecue Jamaican Marinades Poultry

Ingredients:

  • 1 Onion; chopped
  • 1/2 c Scallion; chopped
  • 1 ts Salt
  • 4 ts Jamaican pimiento; (allspice)
  • 1 ts Nutmeg
  • 1 ts Cinnamon
  • 6 Habanero chiles
  • 1 ts Black pepper
  • 4 Garlic cloves
  • 2 tb Fresh ginger root; grated
  • 2 tb Lime juice
  • 1/4 c Olive oil
  • 1/2 c Red wine vinegar
  • 4 tb Soy sauce
  • 4 tb Dark rum
  • 2 tb Brown sugar
  • 2 tb Fresh thyme

Directions:
