Garlicky Mushrooms with Goat's Cheese

  • 4 tb Extra virgin olive oil
  • 2 Garlic cloves; crushed
  • 4 lg Flat mushrooms; wiped and stalks trimmed
  • 4 sl Goat's cheese
  • 6 tb Chopped fresh parsley and thyme.

1. Heat the oil in a large saut‚ pan over a medium heat, add the garlic and fry it for 2 mins. Add the mushrooms and cook for a further 4-5 mins, turning them once or twice and basting with the juices.
