Garlic Mashed Potatoes #14

Ingredients:

  • 7 c Peeled; cubed baking potato
  • 6 Garlic cloves; peeled
  • 1/2 c 2 % low-fat milk; (I used skimmed)
  • 1/4 c Grated Parmesan cheese
  • 2 tb Margarine
  • 1/2 ts Salt
  • 1/8 ts Pepper

Place potato and garlic in a medium saucepan. Cover with water, and bring to a boil. Reduce heat. Simmer 20 minutes and drain. Return potato and garlic to pan. Add milk, Parmesan cheese, margarine, salt and pepper; beat at medium speed of an electric mixer until smooth. Yield: 8 servings, 3/4 cup size)
