Gallet of Tomatoes

  • 5 Organic plum tomatoes
  • 8 Puff pastries
  • Sea salt
  • 2 Stalks; (7 tbsp) fresh basil
  • 150 ml Olive oil; (5fl oz)
  • 10 Big tbsp sun dried tomatoes
  • Smoked mozzarella; one big piece


Slice the mozzarella into 8 pieces. Prepare the pastry as described on the packet.
Marinate the basil in the olive oil. Slice the fresh tomatoes, blanche and skin them and put them on top of the pastries. Put the sun dried tomatoes on top, then a slice of the mozzarella on top of 4 slices of the fresh tomatoes. Finish off with sea salt and one spoon of marinated basil on each one.
