Fruit Tzimmes -- Compote

Ingredients:

  • 1 lb Prunes
  • 1/2 lb Dried apricots
  • 1/2 lb Dried pears or apples
  • 2 c Water
  • 2 tb Honey
  • 3 tb Brown sugar
  • 1/4 ts Salt
  • 1/2 ts Cinnamon
  • 1/2 lb Sweet potatoes, peeled and sliced

Directions:

In a large mixing bowl, presoak all the fruit overnight. Drain the water. Pit the prunes. In a medium sized saucepan combine all the ingredients and bring to a boil. Cook over very low heat for 25 minutes or until the liquid is absorbed. Stir occasionally. Serves 8 or more.
