Festive Fry

  • 25 g Butter; (1oz)
  • 1 tb Oil
  • 75 g Swede or turnip; cut into thin strips (3oz)
  • 6 Peeled spring onions; diagonally cut
  • 50 g Chestnuts; sliced (2oz)
  • 250 g Cooked gammon or shoulder joint; cut into strips (8oz)
  • Grated rind and juice of 1/2 orange
  • 3 tb Redcurrant jelly
  • Salt and freshly ground black pepper


1. Heat the butter and oil in a large frying pan or wok.
2. Add the swede or turnip and spring onions and stir fry for 2-3 minutes. Add the chestnuts, gammon, orange rind and juice, redcurrant jelly and seasoning to taste. Stir fry for a further 5-6 minutes. Serve immediately.
