Fennel Mashed Potatoes

  • 2 Yukon gold potatoes, peeled
  • And diced
  • 2 c Diced fennel
  • 2 tb Butter
  • 1/4 c Whipping cream
  • Salt & freshly ground pepper


Place potatoes and fennel in cold water, bring to a boil and boil for 10 - 15 minutes or until potatoes and fennel are tender. Drain well.
Mash potato and fennel mixture, beating in butter and cream. Stir in onions. Season with salt & pepper. Top each portion with "Crisp Onions" (recipe in side dish database).
