Fennel Fiesta

Ingredients:

  • 4 To 5
  • 1 1/2 tb Butter
  • 1 ts Sugar
  • 2 Cloves garlic
  • 1/4 c Orange juice
  • 1 c Water -- I like all O.J
  • Fennel plants

Directions:

1. Wash and clean the fennel plants. 2. Cut off the tops and bottoms and discard. 3. Slice the fennel into quarters. 3. Melt butter, sugar and garlic in skillet [we use an electric wok with a non-stick surface]. 4. Put the fennel in the skillet and cook until golden brown. 5. Add orange juice, water, and a little salt and pepper. 6. Simmer for 20 minutes until the fennel is fork tender (if fennel is not tender enough, add a little juice or water) [personally, I like to cook the liquid down to a nice, thick sauce]. That's it! We had ours with pasta and pesto sauce, string beans and fresh fruit.
