Feather Light Pancakes

Bread Low-fat/cal Pancakes

Ingredients:

  • 1 3/4 c All-purpose flour
  • 1 3/4 c Non-fat/skim milk
  • 2 ts Baking powder
  • 2 tb Unsweetened applesauce
  • 1 tb Liquified butter buds brand butter substitute
  • 1/4 c Egg substitute (non-fat; no cholesterol)

Directions:

Combine all dry ingredients + 3/4 teaspoon salt & 1 Tablespoon sugar in large bowl. Add remaining ingredients and beat with rotary blender approx. 2 min. scraping sides frequently. Heat non-stick skillet (coated w/non-stick vegetable spray) over medium high. Test with flick of water (sizzles when ready). Pour approx. 1/4 cup batter in skillet. Allow bubbles that form on top of batter to pop (approx. 2 minutes). Turn and brown other side (approx. , 1 to 2 minutes). Remove from skillet, cover with towel or plastic wrap allowing steam to moisten pancake.
