Favorite Fried Rice

  • 8 sl Bacon (turkey); cut in small pieces
  • 1 tb Oil
  • 1 lg Egg; beaten
  • 4 c Cooked rice
  • 1 cn Sliced mushrooms; (4 oz.) drained
  • 2 Green onions; chopped
  • 2 tb Soy sauce, low sodium


PLACE turkey bacon and oil in large nonstick skillet. Cook and stir on medium-high heat 8 minutes or until lightly browned. PUSH turkey bacon to side of skillet. Pour in egg; stir constantly until egg is cooked and separated into small pieces. ADD remaining ingredients; mix well. Cook 5 minutes, stirring frequently. Makes 4 servings.
