Fatfree Fruit Muffins

Ingredients:

  • 1 1/4 c Flour; white or wholewheat
  • 1 c Oat bran or oatmeal
  • 1 1/4 ts Cinnamon
  • 1 tb Baking powder
  • 1/2 c Evaporated skim milk
  • 1/2 c Defrosted apple juice concentrate
  • 1 Egg -or-
  • 2 Egg whites or equivilent
  • 1 Ripe banana; mashed -or-
  • 1/2 c Applesauce
  • 1 c Fruit; berries, diced peaches, pears; apples, raisins, whatever
  • 1/2 c Nuts; if you like

Directions:

Mix dry ingredients. Stir together wet ingredients except 1 cup fruit. Blend together wet and dry, add fruit and nuts. Bake 425 for 17 minutes.
