Fat-Free Bran Muffins

  • 1 c Bran buds or grape nuts
  • 1 c Very hot water
  • 1/2 c Applesauce
  • 1 1/3 c Sugar
  • 1/2 c Liquid egg substitute (e.g. Egg Beaters)
  • 2 c FF buttermilk
  • 2 c Flour
  • 2 1/2 ts Baking soda
  • 1 ts Salt
  • 2 c All bran

From: Laurie Thompson <> To Lisa, who is looking for a bran muffin recipe: Here is one that I have modified to be FF. The original recipe is at least 20 years old and came from a restaurant called The Village House in San Jose, Calif.
Pour hot water over Bran Buds and set aside. Mix together applesauce, sugar, eggs and buttermilk. In a separate bowl, mix flour, soda and salt. Stir into wet ingredients. Add cooled Bran Buds and All Bran. Mix well. Spray muffin tins lightly with cooking oil spray. Fill tins 2/3 full. Bake at 400F for 15 minutes. Makes 2 dozen muffins.
This makes a lot of muffins and can be easily cut in half. I always freeze them, then grab one on my way out of the house in the morning. I imagine prune puree could be substituted for the applesauce, but I've not tried that. (There's already a LOT of bran in these!) You can also add raisins if you like.
