Fake Pareve Eclairs

  • 22 Graham crackers
  • 2 Boxes of pareve vanilla instant pudding
  • 3 c Rice milk
  • 1 Container frozen pareve whipping cream
  • 6 oz Chocolate chips
  • 3 tb Margarine
  • 2 tb Kahlua or rum or orange juice


Beat whippd cream; mix vanilla pudding with milk and fold in whipped cream; put a layer of graham crackers on bottom of 9 by 13 pan; cover with layer of pudding; cover with layer of graham crackers and rest of pudding. add one more layer of graham crackers. melt chocolate with margarine and stir in orange juice or liqueur and spread on top of graham crackers. chill overnight or longer.
