Fajita Rice

Rice

Ingredients:

  • 1/2 lb Flank steak*; cut into thin strips
  • 1 md Onion; sliced
  • 1 md Green pepper; sliced
  • 1 md Red pepper; sliced
  • 1 1/2 ts Garlic powder
  • 1 tb Oil
  • 1/2 c Water
  • 1/4 c Lime juice
  • 1 ts Hot pepper sauce; up to 2
  • 1/4 ts Black pepper
  • 1 1/2 c Cooked rice

Directions:

1. Cook and stir meat, onion, green and red peppers and garlic powder in hot oil in a large skillet until browned. Add water, lime juice, hot pepper sauce and black pepper. Bring to a boil. Reduce heat. Simmer 5 minutes.
 
2. Prepare rice as directed on package.
 
3. Serve meat mixture over rice. Makes 4 servings.
 
*You can cut the flank steak into very thin slices if it is partly frozen.
