Egg Salad Tacos

Ingredients:

  • 4 lg Hard-cooked eggs; chopped
  • 1/4 c (1 ounce) shredded sharp cheddar cheese
  • 1 sm Green onion; chopped
  • 2 tb Mayonnaise
  • 2 tb Salsa
  • 1 tb Sour cream
  • 1/8 ts Salt
  • 1/8 ts Pepper
  • Lettuce leaves
  • 4 Regular-size taco shells
GARNISHES
  • Shredded cheddar cheese
  • Avocado slices

Directions:

Combine first 8 ingredients. Spoon evenly into lettuce-lined taco shells. Garnish, if desired, and serve with salsa. Makes 4 servings.
