Eastern North Carolina Coleslaw

Ingredients:

  • 1 md Head of cabbage
  • 1 1/2 c Mayonnaise
  • 1/3 c Mustard
  • 3/4 c Sweet pickle cubes
  • 2 tb Apple cider vinegar
  • 1/2 c Sugar
  • 1 tb Celery seed
  • 1 1/2 ts Salt
  • 1/8 ts Black pepper

Directions:

Remove outer leaves and core from cabbage. Cut head in half and grate fine. Combine all ingredients in a large bowl, add cabbage, and mix thoroughly. Chill for one hour before serving. Recipe By : Ruthie Garner
