Desserts Passover
Ingredients:
- 3 Eggs, separated
- 3 tb Matzo meal
- 1 tb Sugar
- 1/2 Lemon, rind, grated
- 5 tb Nuts, ground--make each a heaping tablespoon.
- Apricot jam
Directions:
Make a snow with whites. Gradually add sugar. At slow speed beat yolks into whites. Slowly fold in dry ingredients. Fry tablespoon of mixture (to make latkehs) in hot oil; place 1/2 teaspoon jam onto each latkeh (almost in the middle), fold latkeh in half, and fry both sides of the half moon.
