Cheesy Apple Pie in a Glass

Ingredients:

  • 4 c Sliced Apples; Peeled
  • 2/3 c Apple Juice
  • 1/4 c Packed Brown Sugar
  • 3 tb Raisins
  • 1 ts Ground Cinnamon
  • 1/2 ts Ground Nutmeg
  • 1/2 ts Ground Allspice; Divided
  • 1 1/2 ts Vanilla Extract
  • 1/4 ts Rum Extract
  • 3 oz Mascarpone Cheese
  • 3/4 c Cinnamon Graham Cracker Crumbs; Low-Fat
  • 1 c Vanilla Yogurt; Nonfat
  • Mascarpone Cheese; Optional

Directions:

Combine first 6 ingredients and 1/4 teaspoon allspice in a medium saucepan. Cook 20 minutes over medium low heat until apples are tender and mixture is slightly thick. Remvoe apple mixture from heat; cool. Stir in 1/4 teaspoon allspice, vanilla, rum extract, and mascarpone.
 
Sppon 1/4 cup apple mixture into each of 4 parfait glasses; sprinkle each with 1 1/2 tablesoons crumbs. top each with 1/4 cup yogurt, 1/4 cup apple mixture, and 1 1/2 tablespoons crumbs. Garnish with additional mascarpone cheese, if desired. Serve immediately.
