Charleston Chayote Delight

Squash Summer

Ingredients:

  • 2 lg Summer squash; chayote
  • 1 md Onion
  • 1 lg Bell pepper
  • 1/2 Stick butter; or
  • Extra virgin olive oil; large splash
  • 5 Radishes; diced

Directions:

Wash and slice chayotes into thin pieces. Cook all ingredients together slowly in a large cast-iron frying pan. - ------------ Butter OR OIL = SUBstitute up to 3 tablespoons oil for 1/2 stick of butter.
