  • 1/2 ts Olive oil
  • 1 c Bell peppers; chopped
  • 1 c Onions; chopped
  • 2 Cloves garlic; minced
  • 30 oz Dark red kidney beans; drained and washed
  • 29 oz Crushed tomatoes
  • 1 c Water
  • 3 c Turkey light meat; skinless, cooked and cubed
  • 1 tb Chili powder
  • 1 ts Coriander
  • 1 ts Red pepper flakes
  • 1 ts Salt
  • 1 c Fat-free Cheddar cheese; grated

Recipe By: The Great Turkey Cookbook In a skillet heat oil over low heat. Add bell peppers, onions, and garlic. Cook until tender. Then, add beans, tomatoes, water, turkey, chili powder, coriander, red pepper flakes, and salt. Simmer 25 minutes.
