Fish/seafoo Rice

Ingredients:

  • 1 c Rice
  • 1/2 c Chopped onion
  • 2/3 c Chopped red bell peppers
  • 2 Cloves garlic; minced
  • 1 c Chopped celery
  • 1/4 c Chopped parsley
  • 2 oz Pimientos; drained
  • 1/4 c Margarine
  • 1 1/2 ts Seasoned salt
  • 1/2 ts Red pepper
  • 10 3/4 oz Cream of mushroom soup; lowfat
  • 1 c Cooked crabmeat
  • 1 c Cooked shrimp
  • 8 sm Pie shells

Directions:

Cook rice according to package directions.
 
Preheat oven to 400F.
 
In a medium skillet, saute next 7 ingredients. Add seasonings and mix until blended. Add soup and stir well. Add crabmeat, shrimp and cooked rice. Stir to combine.
 
Place 1/3 to 1/2 cup of mixture into each pie shell. Bake at 400 degrees F. for 20 minutes. Serves 8
