Cajun Pan Fried Bay Scallops

Ingredients:

  • 1 1/4 lb Bay scallops
  • 2/3 c Seasoned breadcrumbs
  • 2 tb Plus 2 tsp. oil
  • 1 1/4 Green bell peppers; seeded and chopped
  • 2 3/4 Scallions; chopped
  • 11 oz Mushrooms; sliced
  • 1/4 ts Garlic powder
  • 3/4 ts Cajun seasoning
  • 3/4 Lime; cut in wedges

Directions:

Prep: 10 min, Cook: 5 min.
 
Combine scallops and breadcrumbs in a sealable plastic bag. Shake to coat scallops. Heat oil in a heavy nonstick skillet over medium heat. Add scallops and remaining ingredients, except lime, and cook 5-7 minutes, gently stirring occasionally, until scallops are opaque. Serve with lime wedges.
