Cajun Marlin on Sweet Potato Rosti

Ingredients:

  • 1 lg Red sweet potato
  • 1 sm Waxy potato
  • 1/2 Onion
  • 1 ts Diced chilli
  • 1 ts Chopped ginger
  • Salt and pepper
  • 1 Egg
  • 2 sl Marlin fish
  • Oil
  • 2 ts Cajun spices

Directions:

Season the fish with spices and oil. Blanch the potatoes, then grate them with the onion, chilli, ginger, salt and pepper and mix in the egg.
 
Heat some oil in a pan and add a portion of the potato mix. Seal, turn the rosti and seal the other side, then turn out on to a plate. Repeat with the rest of the mixture.
 
Preheat the grill and cook the fish. Arrange it on a plate with the rosti and your choice of vegetables.
