Cajun Cabbage

Ingredients:

  • 1 lb Ground beef
  • 1 md Green pepper chopped
  • 1 md Onion chopped
  • 2 Garlic cloves minced
  • 1 cn (10 oz) diced tomatoes and green chilies
  • 1 cn (8 oz) tomato sauce
  • 1/2 c Uncooked long grain rice
  • 1 ts Salt
  • 1/2 ts Dried basil
  • 1/2 ts Oregano
  • 1/4 ts White pepper; (up to 1/2)
  • 1/4 ts Black pepper; (up to 1/2)
  • 1/4 ts Cayenne pepper; (up to 1/2)
  • 4 dr Hot pepper sauce; (up to 6)
  • 1 sm Head of cabbage
  • 4 oz Shredded colby cheese

Directions:

in a skillet, cook the beef, green pepper, onion and garlic until meat is no longer pink; drain. stir in the tomatoes and tomato sauce, rice and seasonings. spread to an ungreased 13"x9"x2 "baking dish. top with the cabbage and cheese. cover and bake @350 to 375 degrees until the rice is tender. yeilds 6 to 8 servings.
