Cajun Butter Beans

  • 1 lb Fresh butter beans
  • 1/2 lb Salt meat; parboiled and diced
  • 1 tb All-purpose flour
  • 3 tb Oil
  • 1 lg Onion; chopped
  • 2 Cloves garlic; chopped fine
  • 2 ts Sugar
  • Salt and pepper to taste
  • Water


Make a roux with oil and flour. Add meat and onions; Saute until onions and meat are lightly browned. Add butter beans, garlic and sugar; cook for 15 minutes, stirring.
