Cajun Boudin Sausage

Cajun/creol Meat

Ingredients:

  • 2 lb Ground beef
  • 2 lb Ground pork
  • 4 c Cooked rice
  • 4 lg Onions; minced
  • 10 Cloves garlic, minced (up to 25)
  • 6 sm Hot Chile Peppers, (Serrano, Etc); minced
  • 2 Stalks celery,minced
  • 1 lg Sweet red pepper; minced
  • 1 lg Sweet green pepper; minced
  • 2 md Leeks; minced
  • 6 Green onions; minced
  • 1 c Minced parsley
  • 1/3 c Minced cilantro
  • 1 ts Red pepper flakes
  • 1 ts Black pepper
  • 2 tb Sugar
  • 1/4 ts Thyme
  • 1/4 ts Sage
  • 1/4 ts Rosemary
  • 1/4 ts Savory

Directions:

Mix thoroughly. Stuff into casings.
