Caesar Dressing #4

  • 3 tb Lemon juice
  • 1 ts Dijon mustard
  • 1 Garlic clove; minced
  • 1 ts Grated lemon zest
  • 1 ts Red wine vinegar
  • 1/4 ts Anchovy paste; (optional)
  • 3/4 c Olive oil


In a food processor or mixing bowl combine the lemon juice, mustard, garlic, zest, vinegar and anchovy paste. Slowly add in the oil and whisk or process until smooth. Makes 1 cup.
