Caesar Dressing #3

Ingredients:

  • 1/2 lb Tofu
  • 1 tb Anchovy paste
  • 1 Garlic clove; minced
  • 1 Lemon; Juice of
  • 1/4 c Water
  • 1/3 c Red wine vinegar
  • 1 tb Worcestershire sauce
  • 1 tb Dijon mustard
  • Freshly ground black pepper
  • Romaine

Directions:

Combine all ingredients in a blender jar and process until blended. Best if made one day in advance as the flavor intensifies with time. Serve on romaine lettuce with croutons (below).
 
Yield: 2 cups or 16 servings
