  • 5 fl Low-fat natural yogurt
  • Salt and Pepper
  • 1 Garlic clove, peeled and crushed
  • 2 inch length cucumber, peeled and chopped
  • 1 tb Freshly chopped mint
  • 1 tb Freshly chopped parsley
  • Extra chopped mint, to garnish


Drain off any liquid from the yogurt, place in a bowl and whisk until smooth.
Add the remaining ingredients, except garnish, and mix well. Turn into a serving bowl and chill for 30 minutes. Sprinkle with extrac chopped mint to serve.
