Cabbage Fruit Salad

Ingredients:

  • 4 c Shredded cabbage
  • 2 Oranges; peeled and cut into bite sizes
  • 2 Red apples chopped
  • 1 c Seedless red grape halves
  • 1/4 c Currant or raisins
  • 1/2 c Soy mayonnaise; (or mayonnaise of choice)
  • 1/4 c "Better Than Milk" soy milk; (or milk of choice)
  • 1 tb Lemon juice
  • 1 tb Sucanat
  • 1/8 ts Sea salt
  • 1/2 c Chopped pecans; toasted

Directions:

In large bowl, toss cabbage, oranges, apples, grapes and currants; cover and refrigerate. In a small bowl, combine soy mayo, soy milk, lemon, sucanat and sea salt; cover and refrigerate. Just before serving, stir dressing and pecans into salad.
