Cabbage And Potato Hash

Ingredients:

  • Oriental flavored vegetable cooking spray
  • 1 lg Onion; chopped
  • 1 sm Head cabbage; cut in large chunks
  • 6 md Red potatoes; unpeeled, cubed
  • 3 Carrots; sliced
  • 3 Cloves garlic; minced
  • 4 ts Ginger root; minced
  • 1/2 c Vegetable stock
  • 1 1/2 ts Tamari soy sauce
  • Salt and pepper; to taste
  • 4 tb Fat-free sour cream

Directions:

Spray large skillet with cooking spray; heat over medium heat until hot. Add onion, cabbage, potatoes, carrots, garlic, and gingerroot; spray with cooking spray and saute until lightly browned, about 8 minutes.
 
Add stock and soy sauce and cook, covered, over medium heat until vegetables are just tender, about 5 minutes. Season to taste with salt and pepper.
 
Spoon hash onto plates; top each serving with a tablespoon of sour cream.
