Best Sun-Dried Tomato Vinaigrette

  • 2 tb Sun-dried tomatoes; finely chopped
  • 2 tb Balsamic/red vinegar
  • 1 ts Dijon mustard
  • 1 Garlic clove; minced


pn Salt pn Pepper 1/3 c Extra-virgin olive oil In small bowl, whisk together tomatoes, vinegar, mustard, garlic, salt and pepper; gradually whisk in oil.
Vinaigrette goes particularly well with leafy spring lettuce.
