Baked Cauliflower #2

Ingredients:

  • 1 Head cauliflower; broken into flowerets
  • 1 1/2 c Drained; canned tomatoes
  • 1/2 c Chopped onion
  • 1/2 ts Dried oregano
  • 1/2 ts Salt
  • 1/8 ts Pepper
  • 3/4 c Grated or shredded cheese
  • 3/4 c Coarse cracker crumbs

Cook cauliflower 20 minutes, until just tender. In greased 2-quart casserole combine tomatoes, onion, oregano, salt and pepper. Cover with cauliflower. Mix cheese and crumbs; sprinkle over cauliflower. Bake in 400 degree oven for 20 minutes. Makes 6 to 7 servings.
 
I've been making this recipe since 1960. The oregano steps up the bland taste of the cauliflower.
