Baked Catfish Parmesan #2

Ingredients:

  • 6 Skinned catfish filets
  • 1 c Dry bread crumbs (plain; whole wheat or Italian)
  • 3/4 c Grated Parmesan cheese
  • 1/4 c Chopped parsley
  • 1 ts Paprika
  • 1/2 ts Oregano
  • 1/4 ts Basil
  • 2 ts Salt
  • 1/2 ts Pepper
  • 1/3 c Butter or margarine; melted
  • Lemon wedges
  • Parsley

Directions:

Clean, wash and pat fish dry. Combine bread crumbs, Parmesan cheese, parsley, paprika, oregano, basil, salt and pepper. Dip catfish in melted butter and roll in crumb mixture. Arrange fish in a well greased 9x13 baking dish. Bake at 375ΓΈ for about 30 minutes or until fish flakes easily when tested with a fork. Garnish with lemon wedges and parsley. Yield: 6 servings.
