Baked Catfish Dijon

Ingredients:

  • 2 lb Catfish fillets
  • Salt and pepper to taste
  • 3/4 c Thin sliced onion
  • 2 tb Butter
  • 1 c Mayonnaise
  • 1/4 c Dijon mustard
  • 2 tb Lemon juice
  • 1/2 ts Tabasco
  • 1/4 c Chopped parsley

Directions:

Preheat oven to 350. Arrange fish in shallow baking dish. Salt and pepper liberally; cover with sliced onions and dot with butter. Bake 20 minutes or until fish flakes easily. Mix mayonnaise, mustard, lemon juice, and tobasco. Pour over fish and broil 2 to 3 minutes until brown and bubbly. Sprinkle with parsley and serve hot with lemon wedges.
