Baked Apple Fritters

Ingredients:

  • 2 Eggs
  • 1 1/3 c Flour
  • 3 tb Sugar
  • 1 1/2 ts Baking powder
  • 1 ts Cinnamon
  • 1/4 c Apple cider
  • 6 md Apples; peeled, cored and
  • Shredded

Directions:

Preheat oven to 400 degrees.
 
In large bowl, lightly beat eggs. Add the flour, sugar, baking powder, cinnamon, and apple cider. Mix well . Shred apples and add to batter. Fill muffin pan with mixture. Bake until just under done, testing with toothpick or fork. Finish by broiling for a few minutes to brown tops. Serve warm.
 
Approximately 5 minutes.
