Ingredients:

FOR THE BASE
  • 2 Eggs
  • 2 oz Caster sugar
  • 2 oz Plain flour
FOR THE INSIDE
  • 1/4 A family block of ice cream
  • Choice of fruit
FOR THE MERINGUE
  • 2 Egg whites
  • 2 oz Caster sugar

Directions:

For the base: Beat the egg whites until white and frothy. Sieve in the 2 oz caster sugar. Fold in gently.
 
Bake in oven at 200C/gas 5. Take out and cool. Place on a baking tray and top with fruit and ice cream.
 
For the topping: Mix egg whites with caster sugar until thick and frothy. Spoon over the ice cream - covering well to insulate. Bake in oven (gas mark 5) until golden.
 
Serve immediately.
