Bacon, Mushroom And Potato Tart

  • Egg wash
  • 1 Sheet puff pastry
  • 1 lg Onion; chopped
  • 100 g Smoky bacon; (4oz)
  • 100 g Butter; (4oz)
  • 200 g Field mushrooms; sliced (7oz)
  • 2 lg Potatoes; sliced using mandolin
  • 1 Crushed clove of garlic
  • 2 ts Chopped fresh thyme


Place the pastry on a greased baking sheet. Saut‚ off the onion and bacon and small bits of garlic until softened. Saut‚ off the mushrooms in the butter and pour the bacon and onion over the pastry. Lay the potato slices down either side of the pastry and pour the saut‚ed mushrooms down the centre.
Bake for 25 minutes in a preheated oven at 180øC/350øF/gas mark 5.
