Almond And Tomato Bites

Ingredients:

  • 1 md Onion; finely chopped
  • 1 sm Clov garlic; finely chopped
  • 2 tb Vegetable oil
  • 8 oz Tomatoes; skinned and chopped
  • 4 oz Almonds; ground or coarsely crushed
  • 6 oz Wholemeal breadcrumbs
  • Salt and freshly milled black pepper to taste
  • Freshly chopped parsley to garnish

Directions:

1. Saut‚ the onion and the garlic in the oil in a pan until softened.
 
2. Add the tomatoes and cook for another 5 minutes.
 
3. Pour the mixture into a bowl and add the almonds and breadcrumbs.
 
4. Mix well. Season to taste with salt and black pepper.
 
5. Form the mixture into small, bite-size balls. Arrange on serving plate and cover them with masses of chopped parsley.
