Aduki, Orzo and Pepper Salad

Ingredients:

  • 2 c Cooked aduki beans
  • 2 c Cooked orzo pasta
  • 1 c Finely diced crunchy fennel
  • 1 c Slivered roasted red peppers
  • 1/4 c Finely sliced black pitted olives
  • 1/2 c Packed Italian parsley,, chopped
  • 1/2 c Dressing made with olive oil, balsamic vinegar, garlic
  • Salt and freshly ground black pepper
  • Crumbled goat or feta cheese for garnish

Directions:

Mix the ingredients together and season with salt and pepper; garnish with cheese.
