7-Up Cake

Cake

Ingredients:

  • 1 Box yellow cake mix
  • 1 Box instant pudding; vanilla or pineapple
  • 4 Eggs
  • 3/4 c Oil
  • 1 cn (10 oz) or 1 1/4 c. 7-Up
PINEAPPLE ICING
  • 2 Eggs
  • 1 1/2 c Sugar
  • 1 tb Flour
  • 1 Stick melted margarine
  • 1 c Crushed pineapple including juice
  • 1 1/4 c Coconut

Date: Wed, 10 Jul 1996 07:16:22 +1200 Beat first four ingredients until light and fluffy. Add 7-Up and beat well. Pour into greased and floured 9"x13" pan. Bake 40 minutes at 350 degrees. While cake is baking, make Pineapple icing: Blend first five ingredients and cook until thick, then add coconut. Frost cake while it is still warm.
