7-Grain Oatmeal Cake

Cake Desserts

Ingredients:

- CREAM TOGETHER
  • 1 c AM Canola Oil
  • 2 c Maple syrup
  • 1 1/2 ts Vanilla
- MIX TILL SMOOTH
  • 2 c AM Unbleached White Flour
  • 3/8 c AM Soy Flour
  • 1/2 c Cold water
  • 1/2 c Soy milk
  • 1 1/2 ts Grated lemon rind
  • 1 1/2 ts Sea salt (optional)
  • 3 Egg whites
  • 2 ts Cinnamon
  • 2 ts Non-alum baking powder MIX THE ABOVE 2 MIXTURES
- TOGETHER AND ADD
  • 1 c Cooked AM 7 Grain Cereal
  • 5 c AM rolled Oats
  • 1/2 c Raisins (optional)
  • 1/2 c Chopped nuts

Directions:

Mix well and fill oiled cake pan 3/4 full. Bake 350 F. until light golden brown. This is not a very sweet cake. May be served with apple butter, honey, etc.
