"Verde" Papas Con Chile Verde (Green Chile Potatoes)

Mexican Potatoes

Ingredients:

  • 2 c Pototoes; peeled & thinly slic
  • 2 tb Shortening
  • 1/4 c Chopped onions
  • 2 c Water
  • 1/2 ts Garlic salt
  • 1/2 ts Salt
  • 1/2 c Chopped green chile*

Directions:

1. Brown potatoes in shortening in a medium-sized skillet at medium heat. Add onions and seasonings and cook until onions are tender. 2. Add green chile and water and simmer for 15-20 minutes at low heat. * Varied amounts may be used Posted to MC-Recipe Digest V1 #176
