"Second Time Around" Couscous Salad

Preparation
Ingredients:
- 1 c Cooked couscous
- 1 Scallion,; thinly sliced
- 1 Rib celery,; finely diced
- 1 c Smoked or regular cooked chicken,; cut into bitesize
- 1 c Thawed frozen peas
- 1 oz Blue cheese
- 1/3 c Mayonnaise
- 1 ts Dijon mustard
- Rice vinegar to taste
- Chopped fresh parsley
Directions:
In a mixing bowl combine the couscous, scallion, celery, chicken and peas.In another mixing bowl combine blue cheese, mayonnaise, mustard and rice vinegar to taste; season with salt and pepper.
