$250 Serving Spinach Radiatore

  • 4 c Radiatore pasta [3/4lb]
  • 3 tb Olive oil
  • 1 Onion; chopped
  • 2 Garlic cloves; minced
  • 1 tb Dried thyme
  • 1 tb Dried oregano
  • 10 oz Fresh spinach; chopped
  • 1/4 c Stock - vegetable or chicken
  • 1 tb Lemon juice
  • 1/2 tb Salt
  • 1/2 tb Pepper
  • 1/2 c Light cottage cheese


In large pot of boiling salted water, cook pasta for 8-10 minutes or until tender but firm. Drain well and return to pot.
Meanwhile, in large skillet, heat 2 tb of the oil over medium heat; cook onion, garlic, thyme and oregano, stirring occasionally, for about 5 minutes or until onions are softened.
Add to pasta along with remaining oil, spinach, stock, lemon juice, salt and pepper; toss to coat well. Cook over low heat for about 4 minutes or until spinach is wilted. Stir in cottage cheese.
